- 1⁄4 cup flour
- 1 teaspoon salt
- 1⁄4 teaspoon pepper
- 1 1⁄2 lbs round steaks, cut into serving pieces
- 1 tablespoon oil
- 1 (28 ounce) can diced tomatoes, undrained
- 1 medium onion, . sliced
- 1 (4 ounce) can green chilies, drained
- 4 medium red potatoes, peeled and quartered
- 4 carrots, cut in 1 in slices
- 2 tablespoons cornstarch
- 2 tablespoons water
directions
- Mix flour, salt and pepper.
- Dredge steak pieces.
- Heat oil in dutch oven, brown the steak.
- Add tomatoes and onion, stir.
- Place chilis over steak, bring to a boil.
- Reduce heat, cover and simmer 70 minutes.
- Add potatoes and carrots, cover and simmer 25 minutes more.
- Mix cornstarch and water, stir into pan.
- Bring to a boil, stirring, until thickened and bubbly.

We made this recipe while camping in MN. I premeasured all the ingredients and used a camp stove. I didn't realize it too 2 hours to cook it but it was worth it. I sometimes make recipes with round steak and find it to be to tough but this recipe showed me that cooking it longer makes it so tender and perfect. All ingreedients I already had on hand. We will make this again!!

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!!
I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch.
We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
