  • 3 medium sweet potatoes
  • 1 large egg
  • 1 12 cups dried breadcrumbs
  • vegetable oil (for frying)
  • salt and pepper

directions

  • Bake the sweet potatoes until tender (about 45 minutess).
  • Peel potatoes and mash them.
  • add the egg and bread crumbs and mix well.
  • drop by tablespoons into 360 degree vegetable oil until brown.
  • season with salt and pepper.

  1. Easy and yummy. More like a hush puppy than a puff. I used garlic herb bread crumbs (it was on hand)and it really gave them a good taste. I would imagine this would work extremely well with regular potatoes as well.
