Sweet Potato and Sausage Casserole

ingredients

• 8 ounces rotini pasta
• 8 ounces mild Italian sausage (diced or crumbled)
• 2 medium sweet potatoes, cut into 1/2-inch cubes
• 3⁄4 cup green bell pepper, chopped
• 1⁄2 cup onion, chopped
• 1 teaspoon garlic, minced
• 2 tablespoons olive oil
• 1 (14 1/2 ounce) can diced tomatoes, undrained
• 1 cup half-and-half
• 1⁄4 teaspoon salt
• 1⁄4 teaspoon pepper
• 1 cup cheddar cheese, shredded

directions

1. Cook pasta according to package directions.
2. Preheat oven to 350 degrees F & grease a 13"x9" baking dish.
3. In a large skillet, cook sausage, sweet potatoes, green pepper, onion & garlic in oil over medium heat for 5 minutes or until vegetables are tender, then drain.
4. To these vegetables, add the tomatoes, half-and-half, salt & pepper, then bring to a boil & remove from the heat, before transferring to the prepared baking dish.
5. Sprinkle with cheese & bake, uncovered, for 25-30 minutes or until bubbly.
6. Let stand for 5 minutes before serving.
