ingredients
- 2 cups matchstick-cut peeled jicama (about 2 medium)
- 1⁄4 cup thinly sliced red onion
- 2 jalapeno peppers, seeded and finely chopped
- 1 teaspoon grated fresh lemon rind
- 3 tablespoons fresh lemon juice
- 1 tablespoon sugar (to taste)
- 2 tablespoons chopped fresh cilantro
- 1 teaspoon canola oil
- salt
- pepper
directions
- Combine all ingredients in a medium bowl; toss well.
- Serve as an accompanying side dish for summer meals.

Delicious!!! I had no idea that jicama was so good - I think I've had it before, but it didn't make this kind of impression on me! I used one medium sized jicama, which made more than two cups, once shredded (my KA RotoShredder made quick work of that!) I also used most of a medium sized red onion, which was more like 3/4 cup. When making the dressing, I tasted it after adding 1 tbsp of sugar, and decided to stop there. I'm really glad I did, because 2 tbsp would have been too sweet for me. I also added a touch of salt and pepper. It makes a really nice mix of sweet and a touch of hot, from the jalapenos. Thanks so much for sharing the recipe! I will make it again! Made for PRMR Tag.
