Sweet Cream Rhubarb Pie

"Given to me by my neighbor. I have yet to make it, but I've heard great things about this pie! My neighbor makes this with a lattice crust top, or you could just top it with a second crust, topped with large sugar crystals. Either way, you need pastry for two pie crusts."

  • 2 pie crusts
  • 3 12 cups rhubarb, finely diced
  • 1 cup sugar
  • 13 cup flour
  • 14 teaspoon salt
  • 12 cup whipping cream
  • 1 egg

directions

  • Line a deep dish pie plate with 1 crust. Fill with rhubarb. Mix flour, sugar, salt, cream and egg together in large bowl. Pour over rhubarb. Top with second crust and crimp edges.
  • Bake 15 mins at 425*F, reduce heat to 350*F and bake an additional 25 minutes.
