ingredients
- 4 eggs
- 3⁄4 cup sugar
- 1⁄2 cup vegetable oil
- 1 cup honey, melted
- 1 cup orange juice
- 2 1⁄2 cups flour
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon allspice
- 1⁄2 teaspoon cinnamon
- 1⁄2 teaspoon cardamom
- 1⁄2 teaspoon ginger
- 1 tablespoon baking powder
directions
- Cream eggs and sugar. Add the oil, honey and orange juice.
- Sift the following 7 ingredients : flour, baking soda, allspice, cinnamon, cardamom, ginger and baking powder; add to the bowl with the liquid ingredients. Mix well.
- Pour into a slightly greased baking pan and bake at 350 degrees for 60 minutes.

What a lovely cake this is. I needed to bake a cake in a hurry and since the prep time for this cake is only 15 minutes I thought I'd give it a try. The bakinig time was right on. The honey I used was the liquid variety so I didn't need to melt it. I didn't have any ground allspice so I ground my own from the dried berry. I also sprinkled some powdered sugar on the cake after it had cooled down. Made for the Soup-A-Stars ZWT9

I found lots of Honey Cake recipes on 'zaar, but this one was a bit different with the OJ and the Cardamom.. The ingredient list looks like, but really just a lot of yummy spices. I found this recipe online, and it didn't state what size pan to use, so I would just use your best judgement based on the batter produced :)
