Super Easy Chocolate Chip Muffins

ingredients
- 2 cups flour
- 1 cup sugar
- 1⁄2 cup butter
- 2 tablespoons lemon juice or 2 tablespoons vinegar
- 1 cup milk
- 1 egg
- 1 teaspoon baking soda
- 1⁄2 cup mini chocolate chip
directions
- Preheat oven to 350°F.
- Combine milk and lemon juice in a bowl, set aside.
- In a medium microwaveable bowl combine flour, sugar, and butter.
- Microwave on high for 30 seconds.
- With a fork crumble.
- Set aside 1/2 cup of mixture.
- Beat an egg into milk. Add baking soda, let froth.
- Add to flour mixture.
- Add chocolate chips.
- Stir until just combined - do not overmix.
- Divide evenly in paper lined muffin pan (12).
- Sprinkle with set aside streusel.
- Bake 20 minutes.

These muffins were very easy to make and quite tasty. I couldn't find my muffin pan, so I made them in my mini muffin pan instead and they turned out very well. I misread the recipe and kept half the mixture dry for the topping. Now I see it only should have been half a CUP. Oops! Thanks for sharing, they were very good and my family liked them a lot. The topping was a nice contrast in colour and texture.

I made these muffins for my boys today, as they are on Spring Break and I thought they would enjoy a treat. As I type, they are eating them warm--about 20 minutes out of the oven. The boys give these muffins 5 stars! These were very quick to put together. I love that the recipe calls for basic ingredients and all items that I have on-hand in my pantry. This is not an overly sweet muffin, which is nice. They are very tender in texture and tasty too. I used regular chocolate chips instead of the mini ones. Thanks, Redsie!

Canadian girl that loves to cook for herself and for everyone around her!! I always enjoyed cooking but more so since I started taking better care of myself by eating healthier food (I am a Weight Watchers Lifetime member!). I still love my chocolate though!
