Sumptuous Chicken

"Here is another recipe from the 60's. It was so good the first time I had it as a young girl, I still make it every once in awhile."

  • Shake chicken pieces in bag with flour, salt, pepper and paprika.
  • Brown chicken in butter/shortening in a large skillet. You may have to do this in batches.
  • Remove to baking dish.
  • In same skillet, lightly brown almonds.
  • Stir in remaining flour mixture and mix well.
  • Gradually stir in water, consomme and ketchup.
  • Cook stirring constantly until thickened.
  • Remove from heat; stir in sour cream.
  • Pour over chicken; cover.
  • Bake at 375 degrees to 30 - 40 minutes or until chicken is cooked.
  • Drain and arrange peach halves (cut side up) on chicken. Sprinkle cheese over meat and peaches.
  • Return to oven; uncovered for 10 minutes.

  1. My daughter-in-law's mother made this for us and I can't remember if there was skin on it or not. Do you usually take the skin off or leave it on? Does it taste similar if you do it without the skin? Thanks for your time.

Yikes!! My daughter had fun in PaintShop Pro!! What she can do with a picture. My husband and I live in the "bush" and hour from the closest town. Life here is quiet, yet so much more busy than when we lived in the "city". We grow our own veggies, several kinds of berries, and grow lots of hard neck organic garlic. We have 60 chickens, 4 dogs, 1 cat, 1 bird. Quite the menagerie. I make all my own breads, and sell them (along with the eggs).
