Summer Squash Saute

"My mother used to whip this up for a quick summer side dish. Great with all the bounty from my dad's garden. Very easy and delicious."

  • Saute squash and onion in butter until LIGHTLY browned.
  • Add tomato, parmesan cheese, and garlic salt.
  • Cover and cook until tender about 5 mins.
  • (Longer depending on how tender vegetables are desired) Can always add more of anything- squash, tomato, cheese or butter depending on taste.

    I loved this dish. The only comment I wanted to add to all the other favorable reviews is that this is one of those recipes where the result exceeds the sum of the parts. For a very simple recipe, the result is so good.

    So easy, tasty, and fresh! I was getting tired of deep fried, pan fried, or just crunching raw the zucchini's (is that weird?). The tomato and onions add lots of flavor. I think next time, I'll try it with canned chopped tomatoes with Italian seasoning.

    Very tasty. I did add some chopped celery to the saute and used a light spray of canola oil instead of butter. Also added fresh basil and pepper. Just in time for summer.

    I used one squash and one zucchini. Next time I made add a little more seasoning. While everyone did enjoy it, we all added additional garlic salt and pepper and topped with more parm. I am sure we will be making this lots this summer.

    WONDERFUL. Fixed this for a cookout and everyone loved it. I used 2-3 cloves of minced garlic instead of the garlic salt and sauted it with the veggies. Thanks for the ideas.

    This is such a good veggie side! I don't usually keep garlic salt on hand, so I'll typically add either a packet of Goya Salad and Veggie Seasoning or Jane's Crazy Mixed-Up Salt instead. I'm sure we'll be having this often this summer. Thanks for posting!

    This was a great recipe,I used Zuccini and substituted 1/2 can Roi Tel canned tomatos ( Diced with chili's), since I didn't have fresh tomatos. Turned out great!

    Very good. This is how I always make my summer squash saut this way. I added 1 zucchini, fresh basil, and fresh garlic instead of the garlic salt. This is my families favorite way to eat the overabundance of summer squash that I have every summer. Thanks for sharing!!
