  • Brown the ground beef in a large pot.
  • Meanwhile, chop up the peppers into bite-sized chunks.
  • If you want it to cook faster, you can put the pepper chunks in the microwave for about a minute to soften them up.
  • Add the pepper chunks to the ground beef.
  • Once the beef is close to browned, add the Uncle Ben's rice and flavour packets.
  • Add water and tomato juice.
  • Bring to boil.
  • Once it boils, turn it down to simmer and just let it simmer until the dish is the consistency you want. I like mine with a lot of the liquid absorbed/boiled off. It is done when the rice and the peppers aren't overly crunchy.
  • You can really play with the amounts in this recipe a lot. Sometimes I use 4 packages of the rice. The tomato juice depends on your taste. You might want to add some salt and pepper, because even though the tomato juice and Uncle Ben's rice must have a lot of sodium, the peppers seem to overwhelm it. I tend to just add mine on after, when it's on my plate.
