directions

  • Heat oven to 400°.
  • Scrub potatoes and wrap in foil.
  • Bake for 1-1/2 hour, until tender.
  • Cool.
  • Cut potatoes in half lengthwise and scoop out the pulp.
  • Mash the potato pulp with butter,salt, pepper, and cream cheese.
  • Place back in potato skins.
  • Reduce oven temperature to 350°.
  • Place in baking dish and bake for 30 minutes, until heated through.
  • Sprinkle with paprika.

  2. lovely, flavourful twice baked potato! I scaled it down to one large potato for the two of us and used becel margarine instead of the butter. I used a chipotle & garlic spread, turned out sooo tasty!! Good crunchy skin and lovely soft inside. i will be making these again, thanks for posting.
     
  3. its one of my fav to make its really good. I dont use all that much cream cheese because I tend to make at my dinner parties but if you put a bit of chedder or any kind of chesse you like it makes it just that much better. Try topping it with green onions and bacon bits MMMMMMMMMMMM
     
  4. The cream cheese attracted me to this recipe because it was different than having cheddar or parmesan cheese. The potatoes turned out very well! Last night, a small family member, who normally would eat just one-half of a baked potato, ate more than one -- almost two halves. :D Delicious!

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!! I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch. We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
