Strawberry Pretzel Bars

- 2 cups crushed pretzels
- 2 1⁄2 tablespoons sugar
- 3⁄4 cup butter, melted
- 1 (8 ounce) package cream cheese, softened
- 1 (12 ounce) container Cool Whip Topping
- 1 (6 ounce) package strawberry Jell-O gelatin dessert
- 1 (10 ounce) package frozen sliced strawberries, thawed
directions
- preheat oven to 375 farenheit.
- in a lrg. bowl, mix pretzels, sugar, and butter. spread mixture in a greased 9"x13" baking dish and bake for ten minutes.
- set aside and let cool.
- in a med. bowl, blend cream cheese and Cool Whip til smooth.
- spread over pretzel base evenly.
- in a lrg. bowl, prepare Jell-O as directed on box, EXCEPT use 1/2 cup LESS water than advised.
- add strawberries to Jell-O, stir until mixture slightly thickens.
- pour Jell-O mixture over cream cheese layer.
- refrigerate til firm (usually around 3 hrs.).
- cut into bars, serve, and enjoy!

The recipe is a little vague about how to prepare the jell-o. It would not cool down enough to thicken even a little. Need to maybe use the quickset method and put ice in and less water. I went ahead and poured it on top and OMG, the next thing I was watching was the liquid trading places with the cream cheese layer!! What a disaster :( Well, it still tasted ok, but the crust turned to mush,,,of course.
