- 1 package white cake mix
- 2 -3 tablespoons flour
- 1⁄2 cup water
- 1 package strawberry Jell-O gelatin dessert
- 3⁄4 cup oil
- 4 eggs (unbeaten)
- 1 (6 ounce) package frozen strawberries, thawed

ICING
- 1⁄2 cup butter
- 1 box confectioners' sugar
- 4 ounces strawberries
directions
- Place all ingredients in a large bowl.
- Beat for 3 minutes (strawberries may be added last ½ minute).
- Place batter in a 9X13 pan and bake at 350 for 30 minutes or until knife inserted in cake comes out clean.
- Mix the icing ingredients and beat well.
- Spread on cake.

Based on the reviews of others, I was confident this was going to be a great cake. I followed the recipe exactly, but my cake turned out extremely heavy and dense (maybe it's supposed to be this way???) I ended up adding an extra 12 minutes baking time (my oven temp is correct-I use an oven thermometer to check), so I am not sure what happened here....I can say it had a wonderfully, yummy taste. I just wish it was a bit lighter....OK - I served this for dessert, but without the icing. I made a strawberry coulis, which I poured over each slice. I then added some low-fat vanilla pudding over the coulis and garnished each slice with low- fat Cool Whip. This went over BIG, so I am updating to 4 stars (from my previous 2). To me, the denseness of the cake was a perfect foil for the toppings I used (and highly recommend).

A former co-worker made this for me for my birthday and gave me the recipe. OUTSTANDING! I have since made this cake for current co-workers and it is now EXPECTED of me when a birthday approaches. Instead of the icing, I use milk chocolate frosting and top the cake with hand-dipped chocolate strawberries to make it really special. It is a HUGE hit!
