- 2 -3 ribs, buy 1 st two ribs

Seasoning Mixture
- 1 teaspoon oregano
- 1 teaspoon basil
- 1 teaspoon thyme
- kosher salt or salt
- ground pepper

Sauce Mixture
- 1 tablespoon lea & perrin Worcestershire sauce
- 1 tablespoon olive oil
- 1 tablespoon garlic
directions
- Mix seasoning thoroughtly.
- Mix sauce mixture thoroughly.
- Rub sauce mixture on roast and then pat on seasoning mixture.
- Bake roast for 4 to 5 hoursx at 200 or 250 degrees.
- Use meat thermometer.
- Medium rare.

This is exactly the way to roast a small prime rib, one or two bones. A two pound standing rib roast takes approx 2 hours at 250 degrees. Remove from oven at 130 degrees and let stand 10 minutes before slicing. Perfect med rare and pink from crust to delicious crust. Thanks for the yummy sauce & rub. Add some Merlot and beef stock to the drippings for delicious au jus.
