Squaw Rice

"This is a recipe created by my friend Bev's mother. Bev is one of the wildest Aussies I ever had the chance to meet. Unfortunately she moved back to her homeland early in 2002. I really enjoy this recipe though, you can eat it as a meal alone with a little bread and butter."

  • Heat the oil and butter in a medium pot and add the onion, rice and meat to light brown with the salt, pepper and sugar.
  • Add all the other ingredients including the liquid from the corn and bring to a boil.
  • Cover and lower heat to simmer for 15 to 20 minutes.
  • Stir ingredients at about 10 minutes and cover for remaining time.
  • You could add a little steak sauce or Worcestershire sauce at the table.

  1. Quick, economical dish that's sure to please the kids. Spice it up a bit for the adults if you like.
     
  2. This was good served in a tortilla. It did need some hot sauce and/or dijon mustard for me. It was tasty but the hot sauce, to me, was needed.
     
  3. Good flavor, quick and easy. I added about 2 tsp garlic powder. I did have to cook for a little longer, about 25 minutes. Kids really liked it too!!!

I was born and raised in Utah. I was a graphic designer for ten years for a local school district. I have since moved on but still enjoy doing that for fun. I love to cook, read, listen to music, craft things. I don't think I really have a favorite cookbook. But if I had to pick it would be one that was written up by women in the area with home recipes. I think those are the best. Probably one of the reasons I enjoy Recipezaar so much.
