- 1 tablespoon olive oil
- 1⁄2 cup onion, chopped
- 1⁄2 cup bell pepper, chopped
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon black pepper
- 1 teaspoon garlic, minced
- 4 cups chicken broth
- 2 cups corn
- 6 ounces spinach, fresh baby
directions
- Put oil in a hot pot and add onion, bell pepper, salt, pepper and garlic. Saute 2 minutes.
- Add broth and corn. Bring to a boil.
- Add spinach and wilt.
- Serve.
