Spinach-Rice Pot

"A casserole from the classic "Diet for a Small Planet", by Frances Moore Lappe. Simple vegetarian fare, serve it with a vegetable in a contrasting color (carrots, crookneck squash, etc.), or make it as a side dish for simply cooked meat."

Tweaks

 1. I’ve been making variations of this recipe since 1978 or so! I use brown rice and add 8 oz mushrooms, 1 med onion, and 2-3 cloves minced garlic, all sautéed in a little olive oil. Sub panko breadcrumbs for wheat germ. Always a hit with family and friends.

This site has gotten so horribly bad over the past couple of years, I have stopped using it to manage my recipes and have gone over to using another one, which I have been forbidden to mention on Food.com. It's no secret that there are competitors; send me a message if you are in the same boat and would like to know. For now, I only frequent a few of the forums and that's it. The Titanic has sailed!
