  • Blend olive oil, garlic, basil, salt, and black pepper in a food processor until combined very well.
  • Add basil mixture to pasta and refrigerate for 4 hours.
  • Mix Parmesan and mayonnaise with pasta and toss in spinach.
  • Add salt and pepper to taste.

  2. I love this salad. I make mine with feta cheese and parmesan cheese. I skip the basil, as I'm not much of a basil fan. I also add green onions. I love garlic, but I use only one clove, and sometimes I don't use any garlic at all... And I use sea salt and vinegar and sometimes celery seed in mine. In my house we call this dish, Italian Mac n Cheese. Either way, it's deelish!

  4. This is a very good pasta salad. I liked the mixture of spinach, basil, garlic, and mayo. It was a little on the salty side and I think next time I would cut back on the amount of the parmesan cheese. But I will definitely make it again. Thank you Lacy for posting this recipe!

Tweaks

  1. Feta instead of the parm, shells instead of the penne. With those two tweaks, this becomes a perfect recreation of the overpriced-yet-addictive garlic pasta salad at my local grocery store's deli counter. This is going to save me many dollars, and cost me any kind of weight-loss goals I had between now and spring.
     
  2. Hold the basil and garlic Add feta cheese, green onion, vinegar I season with sea salt and sometimes celery seed as well. Serve chilled Great for picnics, BBQs, and potlucks
