Spinach-Broccoli Casserole

ingredients
- 2 (10 ounce) packages chopped broccoli
- 1 package chopped spinach
- 1 package onion soup mix
- 8 ounces sour cream
directions
- Thaw and drain spinach and broccoli.
- Add onion soup mix; add sour cream.
- Put in buttered casserole.
- Top with buttered bread crumbs (don't butter them) and Parmesan Cheese.
- Bake at 350 for 30 to 45 minutes.

I am sure that this recipe is great for a quick casserole and tastes great too! I look at recipes to get ideas for fresh ingredients that I have left in the refrigerator and after searching for a broccoli, spinach and mushroom recipe I saw this one. To make a long story short, the inspiration grew and I ended up with a delicious vegetable and orzo cheesy casserole using Ricotta cheese, Parmesan and an Italian blend cheese that I also had on hand. I used a small can of cream of chicken soup and sauteed chopped onions in lieu of the sour cream and onion soup mix. I did top with the buttered crackers as in this recipe. I know that this is a very different dish but find that it is interesting how another cook's recipe can inspire and spark an idea to create.

We live in the beautiful Pacific Northwest. I am an office manager and my DH and I love riding on our Harley! I love to cook and have a large family. I enjoy my family, fellowship with good friends, crocheting, crafts, reading, our Harley! Just getting involved in a new church and looking to what we will be doing there in service. Oh, gosh, if I had month off, I think we would tootle around this great country of ours on our Harley. Never seen the Grand Canyon and would love that... hmmm, wonder who will pay for that!? LOL I love the Taste of Home magazine and my favorite cookbook is Best of Friends, Etc and Best of Friends, Too. Great ones! Along with my dozens of church cookbooks!
