Spinach and Garbanzo Bean Salad

- 1 large avocado, halved, seeded and peeled
- 1⁄3 cup sour cream
- 1 1⁄2 teaspoons lemon juice
- 1⁄4 teaspoon celery salt
- 1⁄4 teaspoon hot pepper sauce
- 1⁄4 - 1⁄3 cup milk
- 4 cups torn fresh spinach
- 1 (15 ounce) can garbanzo beans, chilled and drained
- 8 cherry tomatoes, halved
- 1⁄2 small cucumber, thinly sliced
- 1⁄2 cup cauliflower, in small flowerets
- 1⁄2 cup sliced fresh mushrooms
- 1⁄2 small red onion, thinly sliced
- 1⁄2 cup coarsely chopped walnuts
- 2 hard-boiled eggs
directions
- For dressing, mash half of the avocado. Stir together mashed avocado, sour cream, lemon juice, celery salt and hot pepper sauce. Stir in milk til desired consistency. Cover and chill while preparing salad.
- For salad, combine spinach, garbanzo beans, tomatoes, cucumber, cauliflower, mushrooms, onion and walnuts. Slice one hard boiled egg and add to salad. Slice remaining avocado half, brush with additional lemon juice if desired, and add to salad. Top with dressing and toss to mix. Cut the remaining egg into wedges and use to garnish salad.

<p>I am a stay at home mom with 5 wonderful children. When I have time I love to scrapbook and journal. I also crochet and do cross-stitch and enjoy reading my Bible. Sometimes I am all into trying new things then other times I only want old standbys. I like to get veggies into my picky kids by sneaking them in where they were not expecting them. I've learned that its improtant to try new things 2 or 3 times before you can really consider it rejected. Sometimes the second time you offer it to them they will scarf it down, when the first time they barely got down the mandatory taste bite. Go figure.</p>
