  • In a medium-size skillet heat the oil.
  • Add green onions, sweet pepper, garlic, tomatoes and zucchini; saute 5 min, stirring.
  • Remove from heat and keep warm.
  • In a medium-size saucepan, combine the remaining ingredients, mix, cover and let stand 5 minutes, until liquid is absorbed. Add the first mixture and fluff with a fork.

    It was super easy to make and tasted delicious. Will definitely make this again.

    The vegetables and couscous go well together but way too much cayenne pepper for us. All I can taste is the spicy, which is disappointing, given the great mix of vegetables.

    We loved this recipe! I left out the ginger and parsley as I didn't have any and replaced the green onion with red onion. It was delicious and a lovely change to our usual couscous recipes! Thanks for posting!

    This is good, and a nice to way to eat some veg and garbanzos! I felt I needed to salt the veg mix a bit, and then a bit more at the end to the whole dish. Then I also added some leftover artichokes, and even a few olives...I know, these flavours really should not be together. But I think it's good. Normally I wouldn't add the artichokes or olives, just wanted to use up. Thanks!!
