- 1⁄3 cup boiling water
- 2 cups chopped rhubarb
- 2 cups all-purpose flour
- 1 1⁄2 cups sugar
- 1 1⁄4 teaspoons baking soda
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon ground cloves
- 1⁄2 cup vegetable oil
- 3 eggs
- 1 teaspoon vanilla
- 1 cup chopped nuts
directions
- Pour boiling water on rhubarb in large mixing bowl.
- Grease and flour 13"x9"x2" pan.
- Beat rhubarb and remaining ingredients on low speed, 1 minute, then beat on medium speed, 2 minutes.
- Pour into pan.
- Bake at 350 degrees 45 to 50 minutes; cool and frost with your favorite frosting.

Totally Delish!! I couldnt wait for the rhubarb to start growing so I used frozen. I used heaping tsps of the spices because I like lots of spice but other than that followed the recipe. I couldnt wait for it to cool so I ate a piece warm. It was delicious!! It would be amazing with a scoop of vanilla ice cream or a big dollop of cinnamon whipped cream. I phoned my mom with the recipe. Thanks Dancer^ for a wonderful recipe (it will be made again and again, we always have piles and piles of rhubarb.
