Spicy Peanut Butter Cookies

ingredients
- 1⁄2 cup butter
- 1⁄2 cup peanut butter
- 1⁄2 cup sugar
- 1⁄2 cup brown sugar
- 1 egg
- 1 teaspoon ground ginger
- 1⁄2 teaspoon cream of tartar
- 1⁄2 teaspoon vanilla
- 1 1⁄4 cups flour
- 3⁄4 teaspoon baking soda
- 1⁄4 teaspoon salt
- 2 teaspoons cinnamon
- 1⁄2 cup cinnamon, for coating
- 1 cup sugar, for coating
directions
- Cream butter, peanut butter, sugars, egg and vanilla. Blend all the dry ingredients. Add to creamed ingredients. Shape into 1-inch balls and coat in cinnamon/sugar coating mixture. Place on an ungreased cookie sheet 1 to 2 inches apart.
- Bake at 375F for 10 - 13 minutes.

Great cookies. I used Splenda granulated and Splenda Brown to make the cookies with and skipped the sugar coating (because I wanted to eat some of these myself, lol). The spice addition is very good taste addition and they baked beautifully. The recipe was very well behaved and gave my no problems at all but they did give me a smile when I had 2 with a cup of Earl Grey. :D

What wonderful cookies! Made as directed. The dough was very soft, and I felt I wanted to add more flour but kept true to the amounts and it worked out perfectly. For the coating, I only needed/used 1/2 cup sugar and 3 tbsp cinnamon and had leftover. The flavor of the ginger comes thru in the brown sugar taste of these cookies. The flavors truly wake up your palate as they combine well, yet are destinctly seperate. This recipe will wow your friends and family. Definitely great for gift giving also. Thanks for another keeper Jan! :)

Angeles area, college in far northern California and now living in southern part of the San Francisco Bay Area.
I love kids and animals. I am an active volunteer at my two teenage daughters' high school as well as a Girl Scout leader. We have two guinea pigs, one Dalmatian, one cockatiel, and one quarter-horse to keep us busy. I had a career as a marketing writer before I became a full-time mom and volunteer, but I still write all the time as well as participate in a monthly book club.
I stay active and have Jazzercized for over 25 years on a regular basis. I also am trying to do some yoga now and ride horses for fun.
I have loved getting involved in the RecipeZaar games and learning how to post the photos. I am currently playing on the Zaar World Tour and it is lots of fun!
Have been a sports fan since childhood and definitely have enjoyed getting to know about hockey since we have a very successful NHL franchise in our area: Go Sharks!
