Spicy Noodles With Ginger-Garlic Shrimp and Wasabi Sauce

SHRIMP
- 1 lb uncooked shrimp, peeled and deveind
- 1 tablespoon gingerroot, grated (don't use powder)
- 2 garlic cloves, minced
- 1 1⁄2 teaspoons vegetable oil

NOODLES
- 4 ounces wide rice noodles, broken in half
- 1 1⁄2 teaspoons toasted sesame oil
- 2 cups napa cabbage, shredded
- 1 large carrot, shredded
- 1⁄2 cup radish, thinly sliced
- 1⁄4 cup fresh basil, torn
- 1 jalapeno, seeded and sliced
- 1⁄4 cup honey-roasted cashews or 1/4 cup wasabi peas

WASABI SAUCE
- 5 1⁄2 tablespoons soy sauce
- 5 1⁄2 tablespoons rice vinegar
- 1 1⁄2 tablespoons lime juice
- 1 1⁄2 tablespoons vegetable oil
- 1 1⁄2 teaspoons sesame oil
- 1 1⁄2 teaspoons sugar
- 1 1⁄2 teaspoons wasabi paste (plus more to taste)
directions
- In a skillet, sauté the shrimp, ginger, and garlic in the oil for 3 minutes or until shrimp is cooked. Set aside.
- Meanwhile, cook noodles according to package directions. Drain; rinse in cold water and drain again.
- To serve, layer noodles, shrimp, cabbage, carrots, radishes, basil, and jalapeno in individual bowls. Pour dressing over top of each serving and sprinkle cashews or wasabi peas over top.
- A Word of Caution: I highly suggest using the recommended 1 1/2 tsp of wasabi paste to start. Only add more if, after mixing it with the rest of the ingredients in the individual bowls, additional heat is desired. The sauce by itself never seemed hot to us, so we used almost an entire tube of wasabi -- and subsequently cried our way through dinner.

I used this recipe last night, and of course I didn't follow the recipe to the letter, I never do. But I must say the outcome was pure heaven. My partner said it was one of the best meals I had ever prepared. I used rice instead of noodles and added stir fried veggies. I prepared the shrimp and the sauce excatly as the recipe indicated. I will definitely do this one again.

This dish is so fabulous! We would give this 10 stars, if we could - it is that good! I made just a couple of changes, I used regular linguini noodles (wide rice noodles were not available) and subbed iceburg lettuce for the cabbage (personal preference). I used the recommended amount of wasabi, and it was just right for us. I love this cold spicy dish. This recipe was worth all the work you did to get it. Thanks so much for posting. Made for PAC 2010

<p>I never realized how easy it is to create restaraunt-quality dishes at home until I lived with my grandparents over one of my summer breaks from college. As soon as I got my first apartment (a year or so later), I started cooking and have been addicted ever since! I like to challenge myself with new ingredients and techniques. I'm big on research, and will spend hours learning the how to's of new ideas ahead of time, because there's nothing more depressing than making a disappointing meal! <br /><br />I've taken it upon myself to be in charge of Thanksgiving dinner for the past 5 years (I'm 27 now)...I enjoy the challenge, and think I put together a pretty darn good spread! :) <br /><br />My fiance and I both LOVE to eat good food, but although we won't deny ourselves some wings and a beer now and again, we try to eat pretty healthfully on a day-to-day basis.</p>
