Spicy Korean Pork Stir Fry

- 1 lb boneless pork shoulder

MARINADE
- 1 small pear, grated
- 1⁄2 medium onion, grated
- 1⁄2 teaspoon fresh ginger, minced
- 1 garlic clove, crushed
- 1 tablespoon soy sauce
- 2 tablespoons brown sugar
- 2 teaspoons sesame oil
- 3 tablespoons gochujang

STIR FRY
- 1 tablespoon oil
- 1 garlic clove, minced
- 1 onion, halved and sliced

TO SERVE
- 1 scallion, sliced, garnish
- 2 tablespoons sesame seeds, for garnish
- 3 cups cooked rice
directions
- Cut pork into thin slices. Combine Marinade ingredients in a bowl. Add pork. Marinate for 30 minutes, or overnight.
- To cook, heat oil in a large non stick skillet (Note 4) over high heat. Add garlic and onion, cook for 2 minutes until translucent. Add pork and cook for 5 minutes or until dark golden and caramelized, and just cooked through.
- Serve immediately with rice, garnished with sliced shallots and sesame seeds.

We loved the flavor the marinade gave the pork. My pork shoulder was 1-1/2 lbs. and I wish that I had doubled the marinade to give us some extra yummy sauce to serve over the rice. I wasn't sure what to do with the pear, but I assumed it should be chopped, so I chopped it into 1/2" pieces. I marinated the pork about 8 hours and that seemed perfect.
