Spicy Italian Potatoes

ingredients
- 1 kg potato, peeled and diced
- 1⁄4 cup olive oil
- 2 garlic cloves, crushed
- 2 teaspoons mixed Italian herbs
- 1 -2 teaspoon hot chili powder
directions
- Preheat the oven to 220°C.
- Heat the oil in a roasting dish.
- take dish from oven, stir garlic into oil.
- Add potatoes, sprinkle with herbs & chilli. Stir around to coat all the potatoes with oil.
- Bake for about 45 minutes, until potatoes are crispy.

We enjoyed these tasty tatters for dinner last night. They were lovely, crispy and tender, flavorful and very quick and easy to make. This recipe accomodates taste and portion preferences very well--so easy to add differing amounts of oil, potatoes and spices to suit individual family needs without sacrificing flavor and attractiveness. The only change made was to add a little salt. I especially like that they aren't as greasy as many baked potato dishes. Only after making this, though, did I realize it is very similar to Mandy from Oz's recipe (#223058). Both go in my keeper file--thanks, Sara.

Well..about me! I'm married, I have 2 kids (both boys), and I live in Australia.
I have loved cooking for as long as I can remember, and have become completely addicted to browsing through Zaar looking for new recipes!
I have a small animal shelter for rabbits and guinea pigs, and spend most of my time looking after kids or critters!.
My favourite cookbooks are The Essential Pasta Cookbook, The Central Cookery Book, Flo Bjielkie-Peterson's Country Cookbook, and Greek Cooking (I bought that one in Greece, and it's FANTASTIC). At the minute, we are getting ready to move, which is forcing me to sort through my recipe cabinet. I have been trying out all those recipes that are scribbled on pieces of paper, or torn from magazines, so I can decide ifthey are keepers or not. So far I've found a lot of keepers, and will work at posting them on here.
I'm passionate about a lot of things, mainly my kids, animals, and cooking.
I won't even start on my peeves, we'll be here all night! lol
