DIRECTIONS

  • Heat the oven to 350 degrees.
  • In a large bowl, sift together the flour, sugar, baking powder and soda, salt, cinnamon and ginger. Stir in the pecans, figs and oats. Stir in the milk and oil until incorporated.
  • Pour the mixture into a greased 9-by-5-inch loaf dish.
  • Bake until puffed and golden and a toothpick inserted in the center comes out clean, about 1 hour. Cool on a rack until just warm before slicing.
