- 3 -4 lbs beef roast
- 1 package fajita seasoning mix
- 1 jar pepperoncini pepper
directions
- Put roast in your crockpot and sprinkle half the package of fajita seasoning mix over top, then turn roast over and sprinkle other half.
- Then pour the whole jar, including liquid, onto the roast and cook on high for 4-5 hours, or low 9-10 hours.

This is a delightfully spicy treat, especially for those of us who love a spicy zing to our food! It is not TOO spicy, but a unique and yummy way to make roast (sooo easy, too!). I serve this for dinner one night, and then shredd the leftovers (while the meat is still warm) to serve in my Spicy Southwest Beef Enchiladas (#89067)the next night (complete with the cooked pepperoncini's). This roast is wonderful in enchiladas or burritos! Thanks, Diggy!
