Spiced Walnuts

"These scream Christmas to me. My mom used to make them every year at Christmas time. They're just DIFFERENT! :) In a good way of course! :) I'm GUESSING on the cooking time, because I don't time myself when I make them!!! Sorry!!"

  • Boil together the sugar, cinnamon, ginger and milk to a very soft ball stage.
  • Add walnuts and vanilla.
  • Stir until it thickens and coats the walnuts.
  • Turn out onto waxed paper.
  • Seperate the nuts.

    I'm terrible with anything that involves melting sugar, but this one was easy! And it was done in like 20 minutes. And the walnuts are delish, although I added less than 4 cups so I got more coating on the ones i put in the pot...yummy!

    This is very good and a great recipe for the holidays. I am not sure I got the soft ball stage correct, but all in all this was a very easy to prepare. I think it would be good with pecans as an alternative to walnuts. Thanks Marlene 1964! Prepare for Pick a Chef November 2004!
