Special Green Tomato Chutney

"I always have green tomatoes in my garden...our growing season is short and some years it is shorter than normal. So I always have lots of recipes for green tomatoes. Guessing at the amount of jars...not stated in the recipe. The cooking time does not allow for the 24 hours of sitting."

• Yields: 12 1/2 pints
• Serves: 12

ingredients

• 3 lbs green tomatoes
• 1⁄2 lb onion
• 2 tablespoons salt
• 2 lbs cooking apples
• 1 lb brown sugar
• 1⁄2 lb sultana raisin
• 2 ounces mustard seeds, soaked for 3 hours
• 4 chilies, chopped
• 1 teaspoon ground ginger
• 2 1⁄2 cups vinegar

directions

1. Coarsely mince the onions and tomatoes and put into a large bowl.
2. Sprinkle with the salt and set aside for 24 hours. Strain.
3. Put the onions, tomatoes and remaining ingredients into a large saucepan and bring to a boil.
4. Reduce heat and simmer for 1 1/2 hours.
5. Pour into warm sterilized jars and seal.
