  • In a pan heat the oil and saute the potatoes and onions together for 5 minutes until nearly cooked.
  • Add the chorizo sausage and cook.
  • Pour over the seasoned eggs.
  • Sprinkle with the flat leaf parsley.
  • Cook for 4 minutes.
  • Finish under the broiler until golden brown.

  1. We love tortilla de patata, but having Spanish chorizo in it was new for us. We definitely prefer it without. DH loves to make this dish, so tinkered with the ratio here and did 4 medium potatoes to 2 eggs plus 10 whites. The browned onion really imparts a great flavor to it. We cooked the whole thing in the pan. Start to finish this took an hour. Yum!
