DIRECTIONS

  • Heat a large pot. Add olive oil, yellow onions, bell pepper, garlic and celery. Sauté until onions and celery are translucent.
  • In a skillet, cook the ground beef. Pour off any fat or water. Add to large pot.
  • Add tomatoes. Then add and stir in all spices and grated carrots. Bring to bubbling.
  • Reduce to simmer. Simmer, covered, for at least 4 hours. 6-8 hours is better, the flavors develop further. Check a few times, stir and recover.
  • Freezes well.
