Soybean Pie

"A tasty soybean pie with a cornmeal crust. Completely vegetarian if you use vegetarian worcestershire sauce. Prep time does not include time for soaking and cooking soybeans. From the More-with-Less Cookbook."

  • Soak soybeans in water overnight.
  • Cook slowly 3-4 hours.
  • Drain.
  • Heat oil in skillet.
  • Add onion, garlic and soybeans.
  • Saute for 5 minutes.
  • Add tomato sauce, chili powder, worcestershire sauce, salt and pepper.
  • Simmer for a little while.
  • Preheat oven to 350 degrees F.
  • Meanwhile, prepare crust.
  • Combine cornmeal, flour and 1 tsp salt in a bowl.
  • Cut in shortening.
  • In a separate bowl, beat together egg and 1/4 cup water.
  • Add to cornmeal mixture.
  • Press into 9 inch pie plate to form crust.
  • Fill pie with soybean mixture.
  • Top with cheese.
  • Bake 25 minutes.

  1. I tried this with a regular whole-wheat pie crust, doubled the recipe and baked it in a 9x13 pan for 10 extra minutes. It was very tasty and filling when I had it for lunch today. It kept me satisfied all afternoon. The woman who sits next to me at work even asked for the recipe.

I don't think I'm a great cook but I'm the kind of cook who can walk into the kitchen and find good things in the fridge and pantry and make it into a meal that everyone thinks is pretty darn good. Sometimes I use a recipe and sometimes...not so much. I have a great collection of cookbooks, and I love reading them and studying the pictures. Sometimes I even cook the recipes, LOL! And that is why I love Zaar, an unending source of recipes and pictures.
