  • In a skillet, cook beef and onion until meat is browned; drain.
  • Add next 8 ingredients; mix well.
  • Bring to a boil.
  • Reduce heat; cover and simmer for 20 minutes, stirring occasionally.
  • Remove from the heat.
  • Sprinkle with the corn chips and cheese.
  • Cover and let stand for 3 minutes or until cheese is melted.

    This is a very tasty and easy meal. I add a can of diced green chilies and ground cumin for extra flavor. This meal can be stretch to feed many people by adding more rice and liquid before topping with the cheese and crushed chips. Kid pleaser for sure.(please see recipe #12919)

    This was a great one-dish meal. I didn't have any green pepper, but it still turned out great. It really couldn't have been easier to make and it went over very well with the dh2b!

    Love this recipe! The only thing I did different was to not add the cheese and corn chips to the skillet. I let everyone add it to their individual plates at the table beings we have dairy allergy issues in this house! My husband kicked his up a notch with some hot sauce. We all agreed it was a "keeper" recipe. Thanks for submitting.

    This was a great skillet dinner that we all thought was delicious. I added a little cayenne pepper for more heat. I like recipes that aren't a lot of trouble to make because the less time in the kitchen, the better. Thanks.

    Great quick skillet meal. I used 1 tablespoon chili powder and added 1/4 t. cumin for a little more pow. My husband and I both thought it was delicious and something we would make again. I had to cook slightly longer than 20 minutes to get the liquid absorbed. Thanks for sharing.
