Something I just threw together one night but ended up being the best salad I've ever made--corn, cheese, tomatoes and tortilla chips complimented by ranch dressing with a kick.

  • Mix all salad ingredients together in large serving bowl.
  • Mix all dressing ingredients together in a cup or small bowl.
  • Toss with dressing or serve on the side.
  • If preparing ahead of time, wait to add chips so they stay crisp.

    I added black beans!

    I've made this a couple times now and my husband and I love it. I cut the dressing ingredients in half and it turns out perfect everytime. Thanks for sharing!

    I took other reviers advice, and added some cooked chicken breast, that I diced, and added some leftover black olives. Worked out very well, and made a great side to lunch . Made for Ingredient Tag.
