ingredients
- 1 lb ground beef, cooked
- 1⁄2 cup salsa
- 1⁄2 cup taco sauce
- 1⁄2 cup chopped tomato
- 1⁄2 cup refried beans
- 10 drops hot sauce
- 1 teaspoon cumin
- 1 scallion, chopped

Base
- 1 cup cornmeal
- 2 cups water
- 1 tablespoon butter
- 1 teaspoon garlic salt
- 1 teaspoon salt
- 1 tablespoon sugar
- 2 drops hot sauce
- 1 dash Mexican seasoning
- shredded cheese (optional)
- sour cream (optional)
- tortilla chips (optional)
directions
- Saute chopped scallion.
- add to cooked ground beef.
- add remaining ingredients and simmer for 15 minutes.
- For base, combine all base ingredients & stir.
- Microwave for 5 minutes.
- Pour base into greased casserole dish.
- Bake for 10 minutes.
- Top with bean/beef mixture and bake another 20 minutes.
- Serve onto bowls or plates and if desired, top individual servings with shredded cheese and sour cream. Place tortilla chips around the dish.

I live with my husband in Joliet, IL. I'm a network administrator and also teach step aerobics. My hobby during warmer weather is my vegetable garden. I love to cook and make up interesting recipes. I've recently been put on a restricted diet. No dairy, gluten, wheat, oats, sugar. So, I'm looking for ways to spice up my meals. I cook non-restricted meals often as my husband can eat whatever he wants and I love to cook for him. But, once a week, I make him something "interesting" and healthy and he has to at least try it. So far, it's been a big hit.
