Southern Spoon Bread by Eula Gibson

  • Heat 3 cups milk, 1 teaspoon salt and 1 teaspoon sugar to a moderate temperature in a saucepan.
  • Add 1 1/4 cups corn meal to the milk.
  • Return to heat and cook as mush.
  • Beat together 3 eggs, 1 tablespoon baking powder, 2 tablespoons cold water, and 2 tablespoons butter.
  • Beat the egg mixture into the mush.
  • Pour mixture into casserole dish or pan.
  • Bake in 400 F degree oven for 25 - 30 minutes.
  • Slice and serve hot with my "Kentucky Whipped Butter".

  1. I lived next door to Eula in Lexington Kentucky, in 1973. She made KFC chicken (at home) for me and her grandsons, ( Harlan and Ford). The fact is,... she is probably the creator of the original recipe, not Harlan Sanders. She was a fine person and neighbor.
     
  2. This recipe belonged to my Aunt Eula! She was a wonderful cook who started with Harlan Sanders in the beginning at the little cafe in Corbin. She was one of the few people who knew the recipe for the 11 herbs and spices mix. She would make us some but she refused to tell anyone the recipe. Aunt Eula was very loyal. We miss her. Try the spoon bread. It is good!
