ingredients
- 3 cups shelled fresh purple-hull peas
- 2 cups water
- 1⁄3 cup cubed lean ham
- 1⁄2 cup chopped onion
- 1⁄2 teaspoon fresh ground pepper
- 1⁄4 teaspoon salt
directions
- Combine all ingredients in a saucepan; bring to a boil.
- Cover, reduce heat, and simmer 45 minutes-1 hour or until peas are tender.

I've made a pea-lover out of DH!! He's never eaten them, wouldn't like them, would never eat them, etc. Well, after making this recipe (used tasso ham) he suggested we go on a mission to find more purple hull peas. Made a 200 mile round trip to a farmer's market but scored 8 bags for the freezer. Thanks for the recipe and for making DH a reformed meat-and-potatoes-only man!!Reply

These are the peas for me. I used fresh purple hulls that I bought and froze this summer. My mom used to make this with salt pork but it was really salty. I liked the flavor the ham gave the peas but I did add a little extra salt and pepper. I had plenty of time and cooked this on low for about 4 hours. Southern heaven yes indeed. Thanks Nurse Di.Reply

I was so excited to see this posted. This is how my Gran used to make peas. Went to the farmer's market and got fresh purple hulls (gotta be fresh). Husband and I had a feast off these. I cooked them on low all day and they were so tender. The ham gave them such a great flavor. Thanks Nurse Di :)5Reply
