- 2 cups uncooked elbow macaroni (for casseroles)
- 1⁄4 cup butter
- 3 3⁄4 cups shredded cheddar cheese, divided
- 1 1⁄4 cups milk
- 2 large eggs
directions
- Cook pasta, according to package directions; drain well.
- In a large bowl, combine pasta and butter, stirring until butter melts.
- Preheat oven to 350 degrees. Lightly grease 1 1/2 quart baking dish.
- In a small bowl, combine 2 3/4 cups cheese, milk, eggs.
- Pour over pasta, stirring well. Spoon into prepared baking dish.
- Top with reserved 1 cup cheese.
- Bake 40-45 mins, or until set.

I love this recipe. I had the Paula Dean mag that had this recipe but I lost it so I am so glad to have found it here. This is easy, inexpensive and loved by the whole family. What I love about this recipe is that I use up whatever cheese I have in the fridge. Today I used a Mexican blend left over from when we had tacos, a small block of cheddar and a small block of Mont Jack that was in the fridge. No matter what I use it still comes out great!

<p>I was born and raised in Connecticut. I love the New England area, I think it is so pretty with the change of the seasons. <br /><br />I work for an ambulance company in their wheelchair division for non-emergency transportation. I work in the billing and customer service office. I love my job, the duties are so varied that you are always working on something different....no time for boredom. <br /><br />I am a mother to four, two sons and two daughters. <br />All have left the roost to start there own family. At last count, I was a granny to 6 boys and 2 little girls. <br /><br />I love Recipezaar and all the new daily postings. I see so much I want to try and continue to save them. I just don't have all the time to make all these recipes. I lost my husband in July 2006 and I am not the spring chicken anymore...pretty tired when I get home from work...so it's all quick, quick, quick, for me. <br /><br />I have tried a few....and have been pleased with my results and the new taste sensations. I am trying to initiate a goal of trying at least two new recipes a week.
