Sourdough Focaccia

ingredients

  • 1 13 cups of refreshed sourdough starter
  • 14 cup oil (I use olive bit salad is ok)
  • 2 teaspoons sugar
  • 34 teaspoon salt
  • 2 cups unbleached all-purpose flour
  • 1 tablespoon oil, for the top

directions

  • Combine the the above ingredients, kneading in flour 1/2 cup at a time.
  • Let rise till double, punch down, and kneed a little to let the gases out.
  • Let the dough relax for 10 minutes or so .
  • Roll the dough into an oval about 9x6 and place on your favourite baking surface.
  • The dough should be about an inch thick.
  • Make dents all over the surface of the dough.
  • Pour on olive oil liberally and spread it all around. It will pool in the dents.
  • Top with herbs and spices, and possibly parmesan.
  • My favourite is fresh ground black pepper and coarsely ground salt,.
  • Let rise until double again, and bake at 450°F for 15 to 20 minutes,or until brown and sounds hollow when tapped on the bottom.

  1. About how long does it take to double in size? Would I be able to refrigerate it overnight for rising?

  2. Fantastic focaccia bread. Easy with wonderful flavor and texture. Love it with pepper and salt on top.
     
  3. The salt, pepper and parmagianno topping is perfect. I baked the focaccia for 17 minutes in my Kitchenaid convection oven.

  5. Finally got around to making this, wanted a great Italian Sourdough bread for my Pannini (sp) and this was IT. Easy to follow directions and the taste was great. I used my San Franscico starter and that made for a strong enough sourdough taste went well with the spices on top - for the topping I mixed the olive oil with some fresh garlic, salt, pepper, a pinch of rosemary, chopped olives and fresh grated parmasian cheese - YUM. Thanks Tea Jenny, I really enjoyed this and now I have the perfect recipe for when DH arrives home from Italy.

<p>Hi,&nbsp;&nbsp;I&nbsp; have three grown up kids and&nbsp;7 &nbsp;grand kids&nbsp;1&nbsp;greatgrandchild and an other on the way. I work p/t as a cleaner in a large office, and sometimes I help as tea lady and I do a bit of reception duties not a lot just a bit, I tend to cut people off in error of course.&nbsp;I have a wee dog called Molly, and is&nbsp;so so naughty, but we love her to bits even if she won't do as she is told. She is a cross between a poodle and a jack Russell and is now&nbsp;four years old. I love my garden and growing everything&nbsp;&nbsp;&nbsp;I just have a small plot, so I like things that grow well in pots, and of course cooking. I love all cook books so I cant pick one but I have one that I refer to a lot Delia Smith's complete cookery course, a good all rounder. I have discovered that I am now diabetic and have had to change my eating and cooking habits I now try to go for the healther option rather than all the cream, butter and sugar, and I have lost 32 pounds, and feel so much better.
