Sour Cream Tomato Sauce

"This one's really good, you'll get requests for the recipe when you serve this one. Great for a not too expensive "company's coming dinner" Serve with a Green Salad and a hearty Italian Style Bread, and a glass of your favorite red wine."

  • Heat Butter in heavy skillet;ad Onion,Green Pepper & Mushrooms;cook about 10 minutes or until lightly browned, stirring occasionally.
  • Add Tomatoes, Sour Cream, Sugar, & Salt.
  • Simmer over low heat about 1 hour or until thickened.
  • Serve with Rotini shaped Pasta.

  1. This was quite tasty...however I did make a few slight changes to ingredients and prep. First 4 t. of sugar I could see would be WAY too much..1 t. was just enough to cut the acidity...maybe even a little less could have done the job. I also added about 1t. of minced garlic as I cannot imagine a tomato dish without it. Lastly for ingredients...I "swished" out the tomato can with some white wine to get all the good bits out...I'd say 1/4c. max of wine. Now maybe I am outdated but I was always taught sour cream can break down if cooked too long, so keeping that in mind, I simmered everything BUT the sour cream for 45 minutes. I then took the stick blender and pureed the mix as all the liquid had been cooked down. I then added the sour cream and gently heated it for an additional 15 minutes to keep with the original cooking time. I served this over rotini to get everybit of the thick sauce and topped it all with a generous amount of freshly grated Parmesan. I kept thinking this would be a fabulous sauce over a grilled or sauteed chicken breast too. Thank you for sharing this tasty little sauce, I am sure it will be repeated at our home.
     
  2. Very good sauce. Full taste, mild and yet with lots of flavour. Easy to make. Made it just as stated but next time I will cut down the sugar by half, it was just a little too sweet. Thanks for posting.
