  • Clean spinach then steam about 3 minutes.
  • Leaves will look limp but still green.
  • In a bowl combine eggs, milk, spices, blend well with a fork.
  • In a pan melt 1 tbs butter, heat, add part of the egg mixture (2 eggs are intented for 1 person you can scale it to your wants and needs).
  • Add spinachleaves, as many as you like, flip omelette carefully over to brown other side.
  • Put on a plate, spread sourcream to your taste, close omelette, and serve.
  • Extremeley delicious if you love spinach and sour cream.

  1. This was the most wonderful idea. My daughter loved this dish and is asking constantly for it. Not bad for a kid who hated spinach before this. Its quick and easy to make and very good. We love it!

  3. A nice change from my normal omelette! I would add in some onion, cheese, or whatever goodies I might find next time. :)
     
  4. Let me make it clear I love Spinach but my husband was aghast that I made a spinach omelette. Spinach keeps cropping up in my cooking taking all sorts of forms. But when it was ready it was eaten with relish. I have to admit to making some changes in the recipe though. I used one chopped onions and around 2 cloves of garlic too and sauteed them in a little oil till the onions were light brown and then added the steamed spinach I continued with the recipe as is from here on. Did not use the sour cream though and yes used pepper powder instead of the paprika (not easily avlbl here) I have to say it was very nice much to my husband's surprise!!! :) Fay
