Soupburger

"A great standby for a quick lunch! (Or a really quick dinner!) This is an open face sandwich, so you can really pile on the meat and sauce! This is not gourmet fare, but it satisfies the hunger in you when you are in a hurry! My boyfriend in high school won my heart by preparing this for me when we skipped school lunch and he cooked at his house to impress me. You can make this better by using fresh mushrooms and adding some wine....you can almost make it like beef stroganoff and serve it over noodles instead of bread."

  • Brown ground beef in a skillet. Add onions and garlic and cook until tender. Drain grease from skillet.
  • Add soup, parsley, salt, and pepper. Simmer for about 10 minutes.
  • Add sour cream if desired.
  • Spread mayonnaise on bread, and top with meat mixture.
  • Enjoy!

  1. This was such a cheap and easy supper! I had mushrooms to use up, so I threw those in with the mix. I love that I ALWAYS have these ingredients on hand.   2. I did not use the onion, because I was worried about the middle DD's pickiness with onion and served these on a hamburger bun with a slice of American cheese. She still wrinkled her nose but then she ate it all, as did the others. I thought it was delicious. I will definitely make again. I was sneaky the next morning and used the leftovers to make a gravy for bisquits and gravy and they all loved it and commented that it tasted a little different than the usual gravy but it was really good!!
     
  3. Thank you, breezermom, for a wonderfully quick and easy and certainly very tasty meal. :) Great for those weeknights when you know in advance that time's going to be limited. I followed Cats Eye's suggestion and we enjoyed this over some leftover mashed potato, which soaked up the juices beautifully. I also added some wine and fresh sliced mushrooms as breezermom had suggested. I used low fat sour cream and omitted the mayonnaise. Delicious! This did not in the least taste like the quick-to-prepare meal that it was! I do thoroughly recommend adding the wine and fresh mushrooms if you like those ingredients. Thank you so much for sharing this recipe, breezermom. What will I do differently next time I make this? Only one thing: make a larger quantity! Takes only slightly longer but I'd love to have some to put in the freezer and a portion to take for the next day's lunch. Made for Zaar Stars Tag.
