ingredients

  • 1 lb snap peas, trimmed and cut into 1/4 inch pieces
  • 1 cup red onion, finely chopped
  • 1 small garlic clove, finely minced (optional)
  • 3 tablespoons lemon juice, fresh
  • 2 tablespoons oil, your favorite
  • salt and pepper, to taste

directions

  • Combine all ingredients in a bowl.
  • Let stand 10 minutes, tossing occasionally.
