DIRECTIONS

  • Preheat your smoker to 250. Feel free to experiment with wood chips. I like apple, hickory, or maple.
  • Remove the organs from the chicken if they are present. Rub the outside with the salt and pepper (no oil needed, the skin provides that).
  • Place breast side down in your smoker and smoke 3-5 hours or until internal temperature reaches 165.
  • Allow to rest at least 15 minutes before carving to improve moistness.
