- 1 lb smoked sausage
- 1 (16 ounce) can corn
- 1 (10 ounce) package cornbread mix
- salt, to taste
- pepper
directions
- Brown sausage in skillet.
- Drain and put sausage in greased pie pan.
- Pour drained can of corn over sausage.
- Salt and pepper to taste.
- Prepare corn bread mix according to package directions.
- Pour over sausage/corn mixture.
- Bake at 400° for 25-30 minutes, or until corn bread is golden.

Good place to start. We found it dry and fairly tasteless. 2nd time I made it I sauteed onions with the sausage, needed something more. Added some roasted red peppers. Did the layer of cheese under the cornbread. Next time I will add a can of stewed tomatoes. I think that will help flavor it up nicely and make the cornbread a little more moist. Thanks for sharing.
