Small Batch of Chewy Mini Muffin-Cookies

ingredients
- 3 tablespoons unsalted butter
- 4 1⁄2 tablespoons sugar
- 2 tablespoons water
- 1 teaspoon vanilla extract
- 1⁄2 teaspoon salt
- 5 tablespoons flour
- 1⁄2 teaspoon cinnamon
- butter-flavored cooking spray
directions
- Preheat your oven to 350°F.
- Mix in a bowl butter, sugar, vanilla and water until blended.
- Stir in flour and salt until well blended.
- Stir in cinnamon, or any other flavorings, maybe some M&M's, chocolate chips, almond extract, nuts etc.
- Spray a mini muffin tin with butter flavored cooking spray, drop batter into molds.
- Bake in oven for 14 minutes, this is what I did and I got chewy centers. If you want harder, perhaps cook for an additional 3-5 minutes.
- Set on wire rack and carefully take mini muffins out using a butter knife and transfer to serving plate.
- This made 11 out of the 12 mini muffin molds for me!

Wow! You are good at adapting recipes! Not surprized that your friend says that you know the science of food (read your profile). I was interested in finding "small" anything on recipezaar, so I put "small" in the search box. I have had my mini muffin pans for about 2 years and can't find a single QUICK recipe that requires the use of the pans. Well... not any longer.. I will be using those mini muff pans a lot! My cookies don't look like the ones in the picture - those look smooth and shiny almost like toffee. I added 1/3 cup of chocolate muesli to mine. Yummy! Thanks so much

This deserves 5 stars for being so easy to make and so adaptable and for letting me indulge but not too much! I used the suggested amount of cinnamon which I thought was a bit much but I know for next time. I also used 1/4 cup of semi-sweet chocolate chips. This made exactly 11 mini muffins that baked for about 18 minutes. They ended up with a slightly crispy outside and a buttery sweet chewy inside. Just DELIGHTFUL! I'll be playing with this recipe again. Made for PAC Spring 2007.
