ingredients
- 4 boneless skinless chicken breasts
- 1 cup salsa
- 1 (1 1/4 ounce) package taco seasoning
- 1 (10 1/2 ounce) can low-fat cream of chicken soup
- 1⁄2 cup reduced-fat sour cream
directions
- Place chicken in slow cooker and sprinkle with taco seasoning.
- Pour salsa and soup over chicken.
- Cook on low 6-8 hours.
- Remove from heat and stir in sour cream.
- Serve over rice.

Made this the other night for dinner even though I thought it sounded absolutely disgusting. I'm glad I did, because we loved it. I threw 3 frozen chicken breasts in the crockpot, a can of cream of chicken soup because that's what I had. A cup of salsa and 2 TBS of taco seasoning. I skipped the sour cream. Turned the crockpot on high for about 3 hrs because they were frozen, and then turned it down to low for another 2 hrs or so. When it was done, I shredded it, wrapped it in tortillas, covered it with some of the sauce and some cheddar and threw it in the oven for a few minutes to melt the cheese. I was so amazed at how good it was that I've already given the recipe to my mom, daughter and daughter in law!

Great recipe. I did not have as much chicken and it was a bit runnier. I fixed up a dish of dirty rice to go along with it. Those whom I fed it to, piled the chicken and dirty rice on top of the tortillas I made. They added some salsa on top and declared what a great meal it was. I will make this one again.

I made this on 8/25/08 for the "Crockpot Cooking Challenge 2008" in the Cooking Photo Forum. Since there was just my SO and myself,only three very large chicken breast halves were used.(One for each of us,and a leftover for my lunch )I did however keep the amount of the rest of the ingredients the same.For the taco seasoning, Recipe#199955 was used and it worked out just fine for this recipe.I forgot to add the sour cream,but did add it to my serving after plating it.And since SO is doing low-carb,the rice was omitted.This was a pretty good tasting dish.I bet this would be very good shredded and rolled in tortillas.Thanks for posting and,"Keep Smiling :)"
