    g new potatoes (thinly sliced)

    mixed peppers (deseeded and sliced)

    aubergine (cut into chunks)

    courgette (cut into chunks)

    ounces baby onions (peeled and quartered)
  • 2
    teaspoons smoked paprika
  • 1
    small garlic (cut in half horizontally)
  • low-fat cooking spray
  • salt and pepper
  • 800
    g pork tenderloin, fillet (all visible fat removed cut into 1 inch)

DIRECTIONS

  • Preheat oven to gas mark 7, add all ingredient EXCEPT for the pork and spray with low fat cooking spray season to taste.
  • Roast for 10 minutes. Shake the tray and add the pork pieces. Cook for a further 10 minutes. Turn down oven to gas mark 4 and bake for 20 minutes shaking occasionally.
  • Discard bay leaves and squeeze garlic out of the halved bulbs, mix with the meat and veg. divide into 4 bowls and serve.
