ingredients
- 2 packages frozen chopped broccoli, cooked
- 2 cups cubed cooked chicken breasts
- 2 cans cream of chicken soup
- 1 cup hellman mayonnaise
- 1 teaspoon lemon juice
- 1⁄2 teaspoon curry powder
- 1⁄2 cup cheddar cheese, grated
- 1⁄2 cup soft breadcrumbs
- 1 teaspoon butter, melted
directions
- Preheat oven to 350 degrees.
- Spray a 2 qt.
- baking dish with Pam.
- Put broccoli in bottom of pan.
- Mix soup, mayonnaise, lemon juice, and curry.
- Spread on top of broccoli.
- Layer chicken on top of soup mixture.
- Sprinkle with cheese.
- Mix crumbs and butter and sprinkle over cheese.
- Bake uncovered for about 30 minutes until hot.

A very simple recipe with great flavor. I didn't cook my broccoli. Instead, I got it ready in the morning before work and just placed it in the refrigerator until I got home from work to put it in the oven. I used reduced fat mayo and chicken soup. Served it with baked sweet potato and dinner rolls.

Thanks for posting this. I had made a similar recipe for Easter dinner several years ago, but couldn't find the recipe again. I made a lot of adaptations to it tonight to try to get my kids to eat it and to be able to use up the leftover grilled chicken. Since my girls are picky about broccoli, I put in a can of corn and a can of french cut green beans instead. The casserole was already new to them, I didn't want them to refuse to try it at all due to broccoli! I skipped the bread crumbs and topped with tator tots to make them think it was their usual tator tot casserole. I used 1 can cream of chicken, 1 can cream of celery because I was short on chicken soup. I used a b it more, maybe a cup of cheese (co-jack). I baked at 400 in a 9 by 13 pan for about 40 minutes (until the tator tots were done). One daughter, age 3, gobbled it up, and exclamed, "Mama, I like it!" The other, age 4, ate the tator tots, and after much pursuading, at the chicken pieces and some of the corn, but really didn't like the sauce. For the kiddos, I would cut the curry powder down to 1/4 teaspoon (but I loved it!). I'll try them on the broccoli version next time, as the one who did like it also likes broccoli, if I cook it long enough and put cheese sauce on it. Besides, I have a ton of fresh broccoli from my garden to use up, and I like it better with broccoli!

This was so easy and everyone loved it! I made it the night before (with frozen broccoli) and just stuck it in the oven for dinner. I didn't have cream of chicken soup and used 2 cans Progresso cream of chicken with wild grain rice instead. Served it with cooked barley and the divan complimented it well.

I am a wife, Mother and Grandmother. I am a native Texan and can't imagine living anywhere else. My Grandmother taught me to cook before I could see the top of the counter. I remember standing on a stool in her kitchen learning to make pancakes. My Mother loved to cook and it seems she was cooking (or cleaning) most of the time. So those are the two ladies responsible for nurturing my love of cooking!

As you can see I cook and review recipes more than I post them. That's because I am a pinch of this and a dollop of that cook and it's hard to put those recipes down on paper.
